It flows concealed beneath the region’s terroir. A vital nectar is the daughter of Umbria, a symbol so strong that Umbria simply wouldn’t be the same without it. A nectar of many forms, with a thousand scents, flavours and colours. A mystic chromatism that ranges from red to yellow, in an infinite variety of shades, up to the vivid brush strokes of green.

These are the great wines and sumptuous extra virgin olive oils of this generous, invincible and deeply rooted land. Like the Orvieto area, with its unexpected Bacchic rediscovery of ruby reds, dotted by classic Sangiovese or noble Bordolesi varieties (with Cabernet and Merlot at the top of the list), covered with new Doc, Orvieto and Corbara Lake reds. Narni and Amerino are once again strongly tied to Ciliegiolo, with its evocative colours and aromas. The same holds true in Montefalco, where in addition to reds there’s the majesty of its Sagrantino Docg.

The red heart of the region beats strongly in Torgiano, with another Docg wine, the primitive nectar with a Sangiovese base, in the same way that Assisi and its Doc have recently taken on a new guise, as the spiritual and now carnal homeland of sensual red wines. And what else can be said of the ridge that from the capital of Perugia, overlooking and spreading out towards Marsciano, strewn with vineyards and wine cellars with an ancient yet fully modern heart, like the Gamay of Trasimeno that seems to have been created especially for certain dishes from those fresh waters? From red to white, we find ourselves once again in Orvieto that bears the aroma of the history of the wines so dear to popes and emperors. Then we reach Todi, with its Grechetto, always keeping a watchful eye on the valley and the Terni hills, once again brushing against the hill that leads us back to Perugia. And then we move off towards the lake, the Upper Tiber Valley, and down once again between Montefalco and Spoleto where the Trebbiano Spoletino has a promising future.

An itinerary that can find alternative routes and continuity in the emerald green of the extra virgin olive oil, that from the region’s Dop certification disperses its splendour towards the areas that enhance the territorial identity. Once again on the Orvieto and Amerini hills, on the Martani hills, on the enchanted ridges that span from Assisi to Spoleto, the golden green souls of Trevi and Spello live, and on the hills near the shores of Trasimeno Lake. The cultivar that reigns here, in pure and skilfully made blends, tell of the strong flavours of the moraiolo olive, the elegant frantoio and leccino varieties. Passing through varieties that know something about history: from San Felice of Giano dell’Umbria to the Dolce Agogia of the Trasimeno Lake. This is the Umbria of oil, that drop after drop, and place after place, makes it the talk of the entire world.
